Speedy Christmas Pudding

Ingredients:


411 grams luxury mincemeat

3 tablespoons cointreau liquor or brandy

50 grams flaked -- toasted almonds

1 medium grated rind of 1 orange

1 medium orange -- juice of

2 tablespoons black treacle

2 large eggs -- beaten

50 grams fresh white bread crumbs

75 grams self raising flour

2 tablespoons butter for greasing
 

Preparation / Directions:


1 Grease and line the base of a 1 litre/1 3/4 pt microwave-proof pudding basin. 2 Combine all the ingredients in a large bowl until well blended together. Pour the mixture into the prepared basin and level the top. 3 Cover the basin top with buttered greaseproof paper and then microwave clingfilm, pierced several times. 4 Microwave on medium for eight minutes and then allow to rest for five minutes before turning out on a serving plate. To reheat, microwave on medium heat for five minutes.
