Pumpkin Pancakes

Ingredients:


2 cups flour

2 tablespoons sugar

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1 3/4 cups milk -- can use non-fat

1 cup canned pumpkin

2 large eggs
 

Preparation / Directions:


Mix dry ingredients in a bowl. In another bowl, beat milk, pumpkin, eggs and oil. Add dry ingredients to wet ingredients and stir until just moistened. Cook on griddle at medium as for regular pancakes
