Spicy Pickled Vegetables

Ingredients:

3 medium celery
1/4 pound green beans
1 cup cauliflower florets
1 cup broccoli florets
1 cup pearl onions
1/2 cup jalapeno chile
1/2 cup kosher salt
2 cups cider vinegar
2 cups water
2 teaspoons black peppercorns
3/4 teaspoon ground cloves
 

Preparation / Directions:

combine all ingredients in a large container-mix well cover and chill for 2 days to 2 weeks, shaking often serve chilled or at room temperature
