Vegetable Skillet Souffle

Ingredients:

1 Tablespoon butter
4 Whole eggs -- beaten
1/4 Cup milk
1 Tablespoon instant minced onion
1/2 Teaspoon garlic salt
1/4 Teaspoon peppe
1 Cup broccoli -- asparagus or spinach cooked and chopped
1 Cup pitted ripe olives -- sliced
1/2 Cup grated Parmesan cheese
 

Preparation / Directions:

Place butter in 9 inch pie plate. Microwave at high (100%) until melted, = 30 seconds. In a large mixing bowl combine eggs, milk, onion, salt and peppe= r. Stir in vegetables, olives and 1/4 cup Parmesan cheese. Pour into pie plate. Cover with plastic wrap. Microwave at medium (50%) until center is set, 8 to 10 minutes. Sprinkle remaining cheese on top. Microwave, uncovered, at medium high (70%) 1 minute. Makes 6 servings.
