Quick Vegetable Frittata

1 small onion -- sliced
2 cloves garlic-- minced
1 tablespoon fleischmanns original spread -- (70% corn oil)
1 package frozen spinach -- 10oz, thawed, drained
1 can diced tomatoes -- 14 1/2oz, drained
1 cup egg beaters healthy real egg substitute

Preparation / Directions:

Cook and stir onion and garlic in spread in 10 inch non stick skillet over medium heat for 3 minutes or until tender; stir in spinach and tomatoes. Reduce heat to low. Pour egg beaters evenly over spinach mixture; cover. Cook 5 to 7 minutes until egg mixture is cooked on the bottom and almost set on top. Slide onto serving platter; garnish as desired. Serve warm.
