Okra Succotash

1 small onion -- 1/4 inch dice
2 medium tomatoes -- coarsely chopped
1/4 teaspoon ground cumin
1/2 teaspoon turmeric
1 teaspoon mustard seed
1/2 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons peanut oil or vegetable oil
1 pound fresh okra -- stemmed, sliced, 1/2 inch rounds
2 medium red or white potatoes -- scrubbed, 1/4 inch dice
1 1/2 cups corn kernels
1 tablespoon cilantro leaves

Preparation / Directions:

In a large dish combine the onion, tomatoes, cumin, turmeric, mustard seed, chili powder, salt, pepper, and oil. Microwave, uncovered, on HIGH for 5 minutes, or until steaming. Add the okra, potatoes, and corn and stir to mix. Cover the dish and microwave on HIGH for 10 minutes, or until the potatoes are tender. Sprinkle the cilantro over the top and serve right away, at room temperature, or chilled.
