Preparation / Directions:=46or the dressing, place vinegar, shallots, garlic, mustard, and Gorgonzola in a food processor and pure‚ until smooth. With the motor running, slowly add the oil; process until smooth. Season with salt and pepper. Refrigerate until ready to use.
To assemble, clean lettuce and mesclun and place in a large bowl. Add radishes, tomato, and cucumber and toss. Add about 1/2 cup dressing and toss to coat the greens. Crumble Gorgonzola on top and serve.
