Gorgonzola-Dressed Greens

Ingredients:

     1/4           cup  red wine vinegar
  2              whole  shallot -- chopped
  3             cloves  garlic -- chilled
  2        tablespoons  mustard -- dijon style
  4             ounces  gorgonzola cheese
     3/4           cup  olive oil
                        salt and pepper
  1               head  red leaf lettuce
     1/2         pound  mesclun -- mixed greens
  1              bunch  radishes -- sliced
  2                     whole         tomatoes -- in wecges
  1              small  cucumber -- thinly sliced
  1              ounce  gorgonzola cheese -- crumbled
 

Preparation:

=46or the dressing, place vinegar, shallots, garlic, mustard, and Gorgonzola in a food processor and pure‚ until smooth. With the motor running, slowly add the oil; process until smooth. Season with salt and pepper. Refrigerate until ready to use. To assemble, clean lettuce and mesclun and place in a large bowl. Add radishes, tomato, and cucumber and toss. Add about 1/2 cup dressing and toss to coat the greens. Crumble Gorgonzola on top and serve.
