Egg Strata

Ingredients:


1 medium onion -- chopped

1 small zucchini -- sliced

1 small green bell pepper -- diced

2 cups cubed italian bread

1/3 cup shredded lowfat mozzarella cheese

1 cup egg beaters healthy real egg substitute

3/4 cup skim milk

1 tablespoon fleischmanns original spread -- (70% corn oil)
 

Preparation / Directions:


Cook and stir onions, zucchini and green pepper in spread in skillet over medium high heat for 4 to 6 minutes or until tender; set aside. Mix bread cubes and cooked vegetables in greased 8 x 8 x2 inch baking dish. Top with cheese. Mix egg beaters and milk; pour over bread mixture. Bake at 375 degrees F for 45 to 50 minutes or until brown and knife inserted in the center comes out clean.
