Cucumbers In Sour Cream

4 medium cucumber -- peeled and sliced
1 small yellow onion -- diced
8 ounces sour cream
1/3 cup garden blend vinegar
1/3 cup sugar
1/2 teaspoon dried mustard
1 teaspoon salt to taste

Preparation / Directions:

Place cucumbers and onion in a small bowl. Salt very well. Place in refrigerator for 2 to 3 hours. Rinse well and drain. Mix sour cream, vinegar, sugar, and mustard together until smooth. Combine this mixture with the cucumbers. Store in refrigerator until its time to serve.
