1/2 head romaine -- washed and cut into bite-size pieces
1/2 head boston lettuce -- washed and cut into bite-size pieces
1/2 head watercress -- washed and cut into bite-size pieces
1/2 large Cucumber -- peeled and sliced
1 tablespoon Chopped dill
---Dijon dressing
2 large egg yolks
7 tablespoons Dijon mustard
1/2 cup Red wine vinegar
2 1/2 cups Olive oil

Preparation / Directions:

This recipe includes a piquant Dijon dressing. 1. Toss greens and cucumber together. Sprinkle lightly with dill. 2. Add 1 oz. of Dijon Dressing per portion and toss well. Turn onto chilled plates and serve.DIJON DRESSING: 1. Place yolks in bowl, add mustard and whisk a few minutes. Add vinegar and whisk again. 2. Slowly add oil, whisking all the time. This fresh green salad is crisp and cool looking. The Dijon Dressing gives it a piquant taste to match its appearanc
