Bok Choy 1

Ingredients:

1 pound bok choy -- (Chinese celery)
1 teaspoon virgin olive oil
1 clove garlic -- mince
1/4 teaspoon crystaline fructose
1 teaspoon low-sodium soy sauce
1 teaspoon sesame oil
 

Preparation / Directions:

Rince bok choy in cold water. Cut stalks diagonally in 1" pieces, and slice leaves into thin shredds. In a large, non-stick skillet, heat the oil. Add the cut stalks first and saute for 2-3 minutes. Add garlic, the sliced leaves, fructose, soy sauce and sesame oil, and continue to cook over high heat for 2 minutes more. Serve immediately as a side dish.
