Turkey Saute With Fresh Cranberry Salsa

Ingredients:


3/4 teaspoon ground coriander

1/2 teaspoon white pepper

1/4 teaspoon salt

1/4 teaspoon ground ginger

2 pounds turkey breast -- sliced 1/4 inch thick

2 tablespoons vegetable oil

1/2 cup orange juice

1 tablespoon lemon juice

---fresh cranberry salsa

3/4 cup fresh pineapple -- finely chopped

1/2 cup fresh cranberries -- finely chopped

1/4 cup green onion -- thinly sliced

1/4 cup dried dates -- finely chopped

1 tablespoon honey

1 teaspoon lemon juice

1 teaspoon fresh ginger -- minced

1/4 teaspoon cayenne
 

Preparation / Directions:


Chilling time - 1 hour For Turkey: Combine coriander, white pepper, salt and ground ginger. Sprinkle over both sides of each turkey slice. In a large skillet, heat oil over medium-high heat. Saute turkey until lightly browned on both sides, 1 to 2 minutes per side. Add orange juice and lemon juice. Cover, reduce heat, and simmer 7 to 8 minutes, just until turkey is cooked through. Serve immediately with Fresh Cranberry Salsa. For Cranberry Salsa: Combine all ingredients in a small bowl. Cover and chill at least 1 hour.
