Chicken Satay With Peanut Sauce

Ingredients:


6 medium chicken breast halves -- skinless boneless

---MARINADE---

1/4 cup soy sauce

2 tablespoons lime juice

1/2 cup butter -- melted

1 teaspoon ground coriander

---PEANUT SAUCE---

1 small onion -- sliced

1 tablespoon olive oil

1/4 teaspoon cayenne

1 tablespoon soy sauce

1 teaspoon sugar

2 cloves garlic -- crushed

1 cup dry roasted unsalted peanuts

1/4 teaspoon ground ginger

2 tablespoons lime juice
 

Preparation / Directions:


Combine butter, 1/4 cup soy sauce, coriander, and 2 Tbsp lime juice. Marinate chicken in this while you make peanut sauce. To make sauce: sauté onion and garlic in oil until tender. Cool. Place in blender, add everything else, and blend carefully. Slowly and carefully add enough boiling water to form a thick paste. (Add more if you prefer a runny sauce.) Now, broil or grill chicken until done, basting with marinade (about 5 minutes per side). Serve with peanut sauce.
