Baked Acorn Squash - Southern-Style

Ingredients:


2 medium acorn squash

1 tablespoon lemon juice

2 teaspoons corn oil

4 teaspoons pure maple syrup

1 dash allspice -- or other spice of choice

2 tablespoons chopped walnuts
 

Preparation / Directions:


Preheat the oven to 400 degrees. Cut each squash in half and scoop out the seeds. Place the squash cut side down in a nonstick baking dish. Bake for 30 to 40 minutes or until tender. Turn the squash cut side up and drizzle with lemon juice. Fill each half with 1/2 teaspoon oil, 1 teaspoon maple syrup, allspice, and 1/2 tablespoon walnuts. Return to the oven and bake 5 more minutes. 4 servings/Serving size: 1/2 squash
