Seven Happiness Soup

Ingredients:


4 cups chicken stock

1 slice ginger

1 clove garlic -- halved

1/2 cup chinese cabbage -- shredded

1/3 cup tofu -- coarsely chopped

1/3 cup mushrooms -- thinly sliced

1/3 cup snow peas

1/3 cup bamboo shoots -- slivered

1/3 cup water chestnuts -- thinly sliced

1/3 cup carrots -- sliced
 

Preparation / Directions:


Combine stock, ginger and garlic. Simmer for 15 minutes. Remove garlic and ginger. Add remaining ingredients to flavored stock, simmer gently for 20 minutes.
