1 1/2 cups pasta
1/3 cup olive oil
2 tablespoons garlic
1 cup beef brisket
12 cups reduced beef stock
3/4 cup leek
3/4 cup cabbage
1 cup red or white potato
1 cup sweet red onion
3/4 cup celery
1 cup carrot
1 cup zucchini
6 cups tomato concasse
3 piece bay leaf
3/4 cup pinto beans
3/4 cup garbanzo beans

Preparation / Directions:

heat oil in a stockpot, over a medium flame add garlic and brisket heat and stir for 6-8 minutes, to brown lightly add stock and stir add leeks, cabbage, potatoes, onions, celery, carrots, zucchini, tomato concasse, and bay leaves bring to a boil, reduce heat, and simmer for 30 minutes add pinto beans, garbanzo beans, and pasta simmer for 15 minutes, until pasta is tender season to taste with salt and pepper serve hot
