Ingredients:


1/4 cup olive oil

3/4 cup chorizo

3/4 cup smoked ham

1 cup onion

1 cup leeks -- white part only

1 cup celery

1 cup green bell pepper

1 cup carrot

1/3 cup garlic

1/3 cup flour

3 cups chicken stock

12 cups beef stock

1/4 teaspoon powdered saffron

1/2 teaspoon savory

1/2 teaspoon oregano
 

Preparation / Directions:


heat oil in a stockpot, over a medium flame add chorizo and ham heat and stir until browned on all sides add onions, leeks, and celery heat and stir for 5 minutes, until tender add bell peppers, carrots, and garlic heat and stir for 5-6 minutes, until carrots are almost tender add flour, heat and stir for 1 minute remove from heat, gradually stir in chicken and beef stocks season with saffron, savory, oregano, salt, and pepper to taste ladle into a tureen or individual serving bowls serve hot
