Preparation:
heat oil in a stockpot, over a medium flame add chorizo and ham heat and stir until browned on all sides add onions, leeks, and celery heat and stir for 5 minutes, until tender add bell peppers, carrots, and garlic heat and stir for 5-6 minutes, until carrots are almost tender add flour, heat and stir for 1 minute remove from heat, gradually stir in chicken and beef stocks season with saffron, savory, oregano, salt, and pepper to taste ladle into a tureen or individual serving bowls serve hot |
