Chinese Shrimp And Scallop Skewers

Ingredients:


---PER SKEWER---

3 large sea scallops

2 jumbo shrimp

2 pieces green and red bell pepper -- (1 inch) (2 to 4)

2 small onions -- outer layers peeled

2 medium tomato wedges -- or small cherry tomatoes

1 package bamboo -- or metal skewers

---CHINESE SWEET AND SOUR SAUCE---

1/2 cup pineapple juice

3 tablespoons oil

2 tablespoons brown sugar

1 teaspoon soy sauce

1/2 teaspoon black pepper

1/4 cup mild vinegar
 

Preparation / Directions:


Arrange the skewer ingredients on an 8 to 10 inch bamboo, or metal skewer. Use the peppers to separate the seafood. You can either steam the skewer, poach it in white wine, or place it on a grill. In a saucepan over medium heat, combine the ingredients for the sauce. Stir until thickened, then use to baste the skewers.
