Ingredients:

  3              large  sea scallops
  2             chunks  jumbo shrimp
  2             square  pieces of green and red bell -- (1") (2 to 4)
                        -- pepper
  2              small  onions -- outer layers peeled
                        (2 to 3)
  2                     tomato wedges -- or small cherry
                        tomatoes
                        bamboo -- or metal skewers
                        ***CHINESE SWEET AND SOUR SAUCE***
     1/2           cup  pineapple juice
  3        tablespoons  oil
  2        tablespoons  brown sugar
  1           teaspoon  soy sauce
     1/2      teaspoon  black pepper
     1/4           cup  mild vinegar
 

Preparation:

Arrange the skewer ingredients on an 8 to 10 inch bamboo, or metal skewer. Use the peppers to separate the seafood. You can either steam the skewer, poach it in white wine, or place it on a grill. In a saucepan over medium heat, combine the ingredients for the sauce. Stir until thickened, then use to baste the skewers.
