Stir-Fry Flounder

Ingredients:


1 pound frozen flounder fillets -- thawed

1/4 cup soy sauce

2 tablespoons dry sherry

1 teaspoon cornstarch

1 teaspoon sugar

1/4 teaspoon garlic powder

1/4 cup corn oil

1 1/2 cups celery -- diagonally sliced

1 cup mushrooms -- sliced

1/4 cup scallions -- sliced

2 Cup hot cooked rice

1 medium slivered lemon peel -- (for garnish)

1/4 cup salted toasted almonds -- (for garnish)
 

Preparation / Directions:


1. Cut flounder into 2-inch strips. 2. In bowl, combine soy sauce, sherry, cornstarch, sugar and garlic powder. 3. Add fish, stirring gently to blend; let stand 15 minutes. 4. In wok or heavy skillet, heat oil. 5. Add marinated fish mixture, celery, mushrooms and scallions; cook over high heat, 6. Serve over cooked rice; garnish with lemon slivers and almonds.
