Pineapple Salsa

Ingredients:


1/2 medium ripe pineapple -- about 2 1/2 cups, -- small chunks

1/2 small red bell pepper -- diced

1 medium jalapeno or serrano chile -- finely chopped

1/2 cup cilantro -- coarsely chopped

1/2 cup fresh lime juice

1/2 cup olive oil

1/2 cup sugar

1/4 Teaspoon salt and pepper -- to taste
 

Preparation / Directions:


Combine all the ingredients, mix thoroughly, and set aside in the refrigerator for at least 2 hours. Use within 24 hours. Makes 3 cups. Notes: The sugar in this recipe takes the bite off the acidity of the pineapple. You can use less if you are lucky enough to find a truly ripe, sweet pineapple. Serve with fish.
