Hot German Potato Salad 1

Ingredients:


7 medium red potatoes --about 2 1/4 pounds

1 spray nonstick cooking spray

10 ounces frozen seasoning blend --such as mckenzies

2 cups thinly sliced kale

1/2 teaspoon pepper

3/4 cup fat-free house vinaigrette

4 slices turkey-bacon -- cooked and chopped
 

Preparation / Directions:


1. Place potatoes in a large saucepan, and cover with water; bring to a boil. Cook 25 minutes or until tender; drain. Let cool slightly. Cut potatoes into 1/4 inch slices. 2. Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add seasoning blend, and saute 4 minutes. Add kale; cover and cook an additional 2 minutes or until kale wilts. 3. Combine potato slices and kale mixture; sprinkle with pepper. Add vinaigrette; toss gently. Sprinkle with bacon. Serve warm.
