Peanut Butter Pie Ann Little

Ingredients:


1 crust Baked pie shell

1 cup Confectioners sugar -- scant C.

1/2 cup Peanut butter

1/4 cup Cornstarch

1/2 cup Sugar

1/4 tablespoon Salt

3 large eggs -- separated

2 cups Milk

2 tablespoons Butter

1/2 tablespoon Vanilla
 

Preparation / Directions:


Mix powdered sugar and peanut butter together until it feels like cornmeal. Mix cornstarch, sugar, salt and egg yolks together; add milk, butter and vanilla. Cook over low heat until thickened. Pour powdered sugar and peanut mixture into pie mixture and stir just a little. Pour into baked pie shell; top with beaten egg whites. Bake at 325 until light brown for about 15 minutes.
