EASY BACON LAYER PIE

Ingredients:


8 slices bacon

2 medium sized tomatoes

2 ounces s grated cheese -- up to 4

3 large beaten eggs

1 teaspoon salt and pepper to taste
 

Preparation / Directions:


Line a pie dish with the bacon. Immerse tomatoes in boiling water. Leave for several minutes, remove and peel. Slice tomatoes and arrange on top of bacon. Add salt and pepper.Sprinkle with cheese. Top with eggs. Bake in moderate oven for about twenty minutes or until brown...P.S. I usually cook bacon first to get most of the grease out and drained off..
