Banana Pie

Ingredients:


---pie pastry---+

1/3 cup margarine

1 large egg yolk

1/4 cup sugar

1 cup all-purpose flour

---FILLING---

2 cups mashed bananas -- (about 5)

1/2 cup light corn syrup

1 tablespoon margarine

1/8 teaspoon salt

2 tablespoons fresh lime juice

1/2 teaspoon ground nutmeg

1/2 pint heavy cream -- whipped
 

Preparation / Directions:


+Makes enough pastry for one 9-inch pie shell 1. Beat margarine and sugar in small bowl with mixer at medium speed until light and fluffy. 2. Add egg yolk; stir in flour. 3. With hands form into ball; press pastry into 9-inch pie plate to cover bottom and sides. Pierce thoroughly with fork. 4. Bake in preheated 400 F. oven 10 minutes, or until lightly browned; cool. Filling: 1. Stir together bananas, corn syrup, margarine and salt in 2-quart saucepan; bring to boil over medium heat, stirring occasionally. 2. Remove from heat; cool. 3. Stir in lime juice and nutmeg; pour into pie shell. 4. Cover; refrigerate. 5. Just before serving, decorate with whipped cream.
