Preparation / Directions:
1. Force cheese through a fine sieve or food mill.
2. Blend in flour and salt; stir in cream, sugar, lemon rind and juice.
3. Beat egg whites until stiff but not dry; beat yolks until thick and lemon-colored.
4. Stir egg yolks and currants into cheese mixture; fold in egg whites and pour into pie pan lined with pastry rolled 1/8 inch thick.
5. Bake in preheated 450 F. oven 10 minutes; reduce heat to 350 F. and bake for 45 minutes longer, or until pie is firm.
