Cottage Cheese Pie

Ingredients:

1 1/2 cups cream-style cottage cheese
1 tablespoon all-purpose flour
1/8 teaspoon salt
1 cup heavy cream
2/3 cup sugar
2 tablespoons confectioners sugar
1 medium grated rind of 1 lemon
1 medium lemon -- juice of
3 large eggs -- separated
1/3 cup dried currants
1 crust pastry for unbaked 1-crust 9-inch pie
 

Preparation:

1. Force cheese through a fine sieve or food mill. 2. Blend in flour and salt; stir in cream, sugar, lemon rind and juice. 3. Beat egg whites until stiff but not dry; beat yolks until thick and lemon-colored. 4. Stir egg yolks and currants into cheese mixture; fold in egg whites and pour into pie pan lined with pastry rolled 1/8 inch thick. 5. Bake in preheated 450 F. oven 10 minutes; reduce heat to 350 F. and bake for 45 minutes longer, or until pie is firm. 6. Cool; sprinkle with confectioners' suga
