Preparation / Directions:In large oven proof skillet, melt butter. Cook zucchini, tomato and
mushrooms over mediumhigh heat for 1 minute. In large bowl, combine
remaining ingredients; mix well. Pour egg mixture into skittet; cook 10
minutes over low heat. To brown top, place skillet
under broiler 23 minutes...oven proof! Makes 4 servings.
