Mushroom Frittata

Ingredients:

1 Teaspoon butter or margarine
1 Medium zucchini shredded
1 Medium tomato chopped
1 Can sliced mushrooms drained -- (4ounce size)
6 large eggs beaten
1/4 Cup milk
2 Teaspoons dijon mustard
1/2 Teaspoon lawrys seasoned salt
1/2 Teaspoon lawrys seasoned pepper
2 Cups grated swiss cheese -- (8ounces)
 

Preparation:

In large oven proof skillet, melt butter. Cook zucchini, tomato and mushrooms over mediumhigh heat for 1 minute. In large bowl, combine remaining ingredients; mix well. Pour egg mixture into skittet; cook 10 minutes over low heat. To brown top, place skillet under broiler 23 minutes...oven proof! Makes 4 servings.
