Pineapple Muffins

Ingredients:


1 1/2 cups whole-wheat or pastry flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 cup fructose

2 teaspoons cinnamon

2 large egg substitute equivalents

2/3 cup unsweetened applesauce

1 cup crushed canned pineapple -- drained

1/2 cup diced dried apricots
 

Preparation / Directions:


In a medium bowl, combine dry ingredients. In a large bowl, combine remaining ingredients. Slowly add dry ingredients to wet ingredients and mix until blended. Do not beat. Place batter into prepared muffin cups, filling 2/3 full. Bake at 350 degrees for 25 minutes until golden brown. 12 servings/Serving size: 1 muffin
