Apricot-Soy Marinade For Lamb, Beef Or Pork

Ingredients:


2 tablespoons honey spice mustard

1/2 teaspoon salt

1 teaspoon worcestershire sauce

1/4 teaspoon ground black pepper

3 tablespoons golden brown sugar

2 tablespoons apricot jam

2 tablespoons soy sauce

2 tablespoons light olive oil

1 clove garlic -- peeled

1/3 cup lemon juice
 

Preparation / Directions:


Mix all ingredients in a food processor or blender. Use to marinate 3 to 4 pounds of lamb, beef or pork kabobs; or a 3 to 4 pound butterflied leg of lamb. Refrigerate meat in marinade for 24 to 36 hours, turning occasionally. Makes: 1 cup; 6-8 servings
