Ingredients:


3/4 cup fresh lemon juice

3/4 cup minced onion

1/4 cup jalapeno pepper jam -- or jelly

1 teaspoon salt

2 cloves garlic -- minced

1/8 teaspoon freshly ground black pepper
 

Preparation / Directions:


Whisk together all ingredients until well blended. Will keep in refrigerator for a few days. Notes: Add pizzazz to your grilled shrimp and spark to your chicken. After grilling the shrimp chill for an hour and serve on a bed of fresh organic salad greens with a balsamic vinaigrette. The chicken is excellent with extra marinade brushed on and rolled in a tortilla with tomatoes and cheese.
