Sweet Napa Cabbage With Pasta

Ingredients:


8 ounces fresh angel hair pasta -- cooked

2 tablespoons vegetable oil

1 medium Onion -- sliced thin

2 medium chinese eggplants -- sliced thin

1/2 head napa cabbage -- shredded

2 medium tomatoes -- diced

1 tablespoon herbes de provence
 

Preparation / Directions:


In a non-stick frying pan or a wok, heat oil until smoking. Add the onions and cook until softened, about 4 minutes. Add eggplant and cook for 4 more minutes. Add the cabbage, tomatoes and Herbes de Provence and simmer for 5 minutes. Toss with angel hair pasta and season to taste.
