Sookhe Aloo - Dry Potatoes With Ginger And Garlic

Ingredients:


3 cups potatoes -- boiled, cooled, cut into 1 inch cubes

1 pieces fresh ginger root -- peeled and chopped

3 cloves garlic -- peeled

3 tablespoons water

1/2 teaspoon ground turmeric

1 teaspoon salt

1/2 teaspoon cayenne pepper

1/3 cup vegetable oil

1 teaspoon fennel seeds -- optional
 

Preparation / Directions:


Prepare potatoes. Blend ginger, garlic, 3 tablespoons water, turmeric, salt and cayenne into paste. Add oil into a large frying pan over medium heat. Add fennel seeds and let them sizzle for a few seconds. Add ginger-garlic paste and fry 2 minutes. Add potatoes; stir-fry 5-7 minutes or until potatoes have a nice golden crust to them. Serve.
