Alu Piaz Ki Sabji - Curried Potatoes and Onions

Ingredients:


5 medium potatoes

1 medium good sized onion

3 whole red peppers

1/2 teaspoon mustard seed

1/2 teaspoon ground turmeric

1/2 teaspoon ground red pepper

1/2 teaspoon garam masala

1 teaspoon salt -- to taste

1/4 cup vegetable oil
 

Preparation / Directions:


1. Boil potatoes. Peel and cut into 1 inch chunks. Slice e onion lengthwise. 2. Heat oil in frying pan and add whole red peppers and mustard seeds. When seeds start to burst, add onions. Fry until onions are light brown. 3. Add potatoes and spices, mix well, cover and fry 10-15 minutes.
