Grilled Potato Salad

Ingredients:

2 pounds new potatoes (14 to 16)
1/2 medium red onion very thinly sliced or 4 medium green onions, sliced (1/2 cup)
1/3 cup olive or vegetable oil
1/3 cup parsley flakes chopped fresh or 2 tablespoons dried
1 tablespoons oregano leaves chopped fresh or 1 teaspoon dried
1/2 teaspoon salt
1/4 teaspoon pepper Freshly ground
2 cloves garlic finely chopped
 

Preparation / Directions:

1. Heat 1 inch water (salted if desired) to boiling in 3-quart saucepan. Add potatoes. Cover and heat to boiling; reduce heat. Cook 15 minutes; drain and cool. Cut potatoes in half. Spray with cooking spray. 2. Heat coals or gas grill. Cover and grill potatoes 5 to 10 minutes or until tender. 3. Gently mix potatoes and remaining ingredients. Serve immediately.
