Gorgonzola Stuffed Olives

Ingredients:


1/4 cup fresh basil leaves

1 tablespoon garlic

2 tablespoons pine nuts

1/4 cup parmesan cheese

1/4 cup olive oil

3 ounces gorgonzola

3 ounces cream cheese

1/4 cup half and half

1/4 teaspoon kosher salt

1/4 teaspoon freshly ground white pepper

12 large super colossal olive

1 piece lemon zest

1/4 Cup pine nuts
 

Preparation / Directions:


combine basil, garlic, and pine nuts in a food processor with machine running-add olive oil in a thin stream process until thickened add blue cheese and cream cheese-mix well season with salt and white pepper to taste thin with half and half as needed to a piping consistency spoon into a pastry bag, fitted with a large star tip pipe onto olive halves garnish with toasted pine nuts and lemon zest strings arrange onto a serving platter serve at room temperature
