Danish Fruit Soup

Ingredients:

1 package apple gelatin
1 cup boiling water
1 stick cinnamon
11 ounces canned mandarin oranges -- undrained
1 Cup cold water
1 cup fresh strawberries -- halved
1/3 cup dairy sour cream -- (for garnish)
2 tablespoons slivered almonds -- toasted
 

Preparation / Directions:

1. Dissolve apple gelatin in boiling water; add cinnamon stick and let stand 15 minutes. 2. Remove cinnamon stick. 3. Drain mandarin oranges; reserve syrup. 4. Add enough cold water to syrup to measure 2 1/2 cups liquid; stir in dissolved gelatin. 5. Mix in oranges and strawberries; chill for several hours. 6. Portion soup into individual bowls; garnish each serving with a dollop of sour cream and sprinkle with slivered almonds.
