Crostini With Chevre And Olives

1/2 cup kalamata olives -- pitted and chopped
2 teaspoons olive oil
1 teaspoon fresh rosemary -- chopped
1/2 teaspoon lemon rind -- grated
1/4 teaspoon fresh ground pepper
1 clove garlic
4 ounces mild chevre -- softened
1 loaf baguette
1 tablespoon fresh parsley -- chopped

Preparation / Directions:

1. In a small bowl, combine olives, olive oil, rosemary, lemon rind, pepper and garlic, cover and let sit for 30 minutes at room temp orup to 8 hours in the refrigerator. 2. Stir marinated olive mixture into the chevre; mix well. 3. Cut the bread on the diagonal into 1/2 inch slices, place on ungreased baking sheet and then broil until just golden - watch carefully that they don't burn ! 4. Spread toated slices of bread generously with the cheese mixutre, place under the broiler for 2-3 minutes or until chesse is just turning golden. 5. Remove from oven, sprinkle with parsely and ser
