Southern Fried Catfish

Ingredients:


2 pounds catfish -- fillets

1/2 Medium lemon

3/4 cup cornmeal

1 teaspoon salt

1/8 teaspoon pepper

2 cups oil for frying
 

Preparation / Directions:


Rub fillets with cut lemon on both sides. Roll in a mixture of cornmeal and seasonings. Pour 1/8 inch of oil in a large skillet and place over medium heat. Fry fillets until brown and crisp on both sides, about 8 minutes. Spice up with Tabasco Sauce sprinkled on with the lemon if desired.
