Tropical Fish Fillets

Ingredients:


2 pounds cod fillet -- (6)

1/2 teaspoon salt

1/4 teaspoon ground red pepper

20 ounces pineapple tidbits -- drained reserve 1/4 cup of juice

1 tablespoon butter -- melted

1/4 cup coconut -- toasted

2 tablespoons fresh parsley -- chopped
 

Preparation / Directions:


Heat oven to 350 degrees. Spray 13X9-inch baking dish with no stick cooking spray. Pat fillets dry with paper toweling; place in baking pan. Sprinkle with salt and pepper. Pour reserved juice and butter over fish. Bake for 20 to 25 minutes or until fish flakes with a fork. Top with pineapple tidbits, coconut, and parsley. To serve, spoon sauce over fish.
