Crunchy Baked Fish Fillets

Ingredients:

1/3 Cup butter
1 clove garlic
3/4 teaspoon fine herbs
2 packages frozen perch fillets -- (1 lb.) thawed
1 1/2 Cup crushed potato chips (about 4 cups potato -- divided)
3 tablespoons grated Parmesan cheese
 

Preparation / Directions:

Melt butter in a small saucepan. Stir in garlic and herbs; remove from heat. Place fillets in a greased 15 x 10 x 1 inch jellyroll pan; brush with half the butter mixture. Sprinkle with half the crushed potato chips; turn fillets, and repeat procedure. Top with cheese; bake at 400 F for 10 to 15 minutes or until fish flakes easily when tested with a fork.
