Fish Florentine

Ingredients:


1 1/2 pounds fish fillets

10 ounces spinach package frozen, thawed, WELL DRAINED

8 ounces cheddar shredded

1/2 cup pork rinds crushed (optional)

5 medium cherry tomatoes thinly sliced (optional)

2 tablespoons lemon juice

2 tablespoons white wine

1/2 teaspoon parsley

1/2 teaspoon Old Bay

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon pepper
 

Preparation / Directions:


Preheat oven 350. Spread spinach over bottom of 8-9" casserole dish. Arrange fillets over top. Sprinkle with lemon juice and white wine, and seasonings. Sprinkle with cheese. (If adding tomatoes, arrange slices over cheese), then pork rinds. Bake 30-40 min. (15 g carb).
