Eggs A La Russe (Yaitsa Po-Russki)

Ingredients:


6 large hard-boiled eggs -- halved

2 tablespoons mayonnaise

1/2 teaspoon dry mustard powder

1 tablespoons dijon mustard

3 tablespoons finely chopped sour-sweet gherkins

2 teaspoons finely chopped spring onion

1/4 teaspoon salt

1/4 teaspoon freshly ground black pepper

1/4 teaspoon capers -- for garnish

1/4 teaspoon paprika -- for garnish
 

Preparation / Directions:


Remove the yolks from the halved eggs, reserving the whites, and place them in a small bowl. Mash them thoroughly, then blend the mayonnaise, the two mustards, the chopped gherkins, spring onion and seasoning to taste. Spoon the mixture into the egg-white halves and garnish decoratively with the capers and paprika.
