Ingredients:


5 pounds duck

1/2 cup cornstarch

2 cups peanut oil
 

Preparation / Directions:


remove bones from duck cut into individual serving pieces rub skin with cornstarch heat oil to 370 degrees add duck and fry until crisp drain on a cooling rack and blot with paper towels serve hot or at room temperature, with assorted dipping sauces to the side
