Zesty Cilantro, Chile And Pea Dip

Ingredients:


1/4 cup chopped fresh cilantro

4 ounces Ortega chopped green chiles

2 cups frozen petite peas -- thawed

10 1/2 ounces silken tofu

1 tablespoon fresh lemon juice

1 1/2 teaspoons ground cumin

1/4 teaspoon freshly ground black pepper

1/4 teaspoon salt -- to taste

1 medium tomato slices -- for accompaniment

1 bunch fresh cilantro -- for garnish
 

Preparation / Directions:


In a food processor or blender, combine all ingredients. Mix until smooth. Whirl about 30 seconds on high. Refrigerate at least 1 hour. Mound over overlapping tomato slices; rim with fresh cilantro.
