Zesty Cilantro, Chile And Pea Dip

Ingredients:

     1/4  cup           chopped fresh cilantro
   1      4 oz can      Ortega chopped green
                        -- chiles
   2      cups          frozen petite peas -- thawed
   1      10.5 oz pkg   silken tofu
   1      tablespoon    fresh lemon juice
   1 1/2  teaspoons     ground cumin
     1/4  teaspoon      freshly ground black pepper
                        salt -- to taste
                        tomato slices -- for accompaniment
                        fresh cilantro -- for garnish
 

Preparation:

In a food processor or blender, combine all ingredients. Mix until smooth. Whirl about 30 seconds on high. Refrigerate at least 1 hour. Mound over overlapping tomato slices; rim with fresh cilantro.
