Never Fail Pineapple Flan

Ingredients:

1 can sweetened condensed milk
1 2/3 cups evaporated milk
15 ounces crushed pineapple -- drained
2 cups boiling water
6 ounces pineapple gelatin
2 cups sugar
 

Preparation / Directions:

Dissolve the gelatin in the two cups of hot water. Mix the two kinds of milk with the canned pineapple. Combine all ingredients and pour into a caramelized mold or shallow, oven-proof casserole dish. The caramel: Melt sugar over medium heat until it becomes the color of caramel. Pour the caramel over the flan mold. (Caution! melted sugar is extremely hot.) Refrigerate and serve.
